Easy Low Carb Beef Stew

Beef stew is a food that is so comforting for my family. It’s a soup that warms us up, but at the same time is so satisfying because it is so hearty, and it gets us all full. We usually eat a good chili or beef stew right before we head out to go trick or treating on Halloween and then eat more when we get back into our home. This recipe will literally feed a tribe. It feeds a big family, but also does great feeding a lot of folks at a pot luck. I love taking this to a potluck or a party during the fall and winter months. I usually place sour cream and shredded cheese on the side to go along with it and when I do, it’s a hit.

Servings: 8-10     Prep Time: 10 minutes     Cook time: 35 minutes


  • Chuck Steak or Roast cut for Beef Stew. The label should say the meat is cut for beef stew. I used the family size. It was 2.25 pounds of chopped meat for beef stew
  • 2 tbsp. olive oil
  • 1 large white onion chopped
  • 1 cup radishes cut in halves
  • 3 ribs (3 single sticks) celery chopped
  • 8 oz. mushrooms sliced
  • 24oz. jar pasta sauce (I use Rao’s Homemade because it is low carb and no sugar added)
  • 1 cup beef broth
  • 2 tbsp. fresh thyme minced
  • 1 tbsp. fresh dill minced
  • Salt and pepper to taste


  1. Add olive oil to a medium high heated pot
  2. Add meat, onion, radishes, celery and mushrooms to pot. Stir occasionally until meat is slightly brown
  3. Turn heat to high. Add pasta sauce and beef broth. Stir and cook until the soup comes to a boil
  4. Turn heat down low. Add thyme and dill. Add salt and pepper to taste
  5. Place cover on pot and simmer for at least 20-25 minutes
  6. Stir before serving
