Italian Sausage Stuffed Mushrooms

Italian Sausage Stuffed Mushrooms

Mushrooms are my thing! I am a HUGE mushroom fan. I use mushrooms in a lot of my recipes. They are tasty and hearty to me. I just love them. If you are a mushroom fan you know my love for mushrooms. My family requests me to make these stuffed mushrooms at every holiday dinner. They are yummy and the perfect side dish or appetizer.

Servings: About 15-20 mushrooms     Prep time: 10 minutes     Cook time: 20 minutes

Ingredients

  • Olive oil
  • 32 oz. mushrooms (I use cremini mushrooms)
  • 1 pound ground mild Italian Sausage
  • 1 egg
  • 2 tbsp. almond flour
  • 1/2 cup fresh basil chopped
  • 1/4 cup green onions chopped
  • 1/2 cup parmesan cheese shredded
  • Salt and pepper to taste

Instructions

  1. Pull mushroom stems out of mushrooms. Roughly chop stems and place to the side
  2. In a pan on medium high heat cook Italian sausage, chopped mushroom stems, green onions and basil. Sprinkle with salt and pepper. Be sure to separate meat small enough to stuff mushroom tops. Cook until meat is fully cooked. Let meat cool and place to the side
  3. Preheat oven to 375 degrees
  4. Place mushroom tops on a flat baking sheet with the round side of the mushroom facing down and drizzle olive oil over mushrooms
  5. When meat has cooled, place meat mix in a bowl. Add to the meat mix the egg, almond flour and parmesan cheese and mix well
  6. Scoop a spoonful of the meat mix and place into the center of the mushroom. Stuff as much as you can. We want the mushrooms to be fully stuffed
  7. Place in oven for 15 minutes
  8. Top with green onions and parmesan cheese before serving
