This is the salad I want whenever I need a tasty salad to eat, but one that will help me stay full. I like to switch things up from eating the regular chicken salads. This mixed greens and pepperoni salad sort of has a Mediterranean twist to it and I like it. I hope you like it too!
Servings: 2 Prep Time: 10-15 minutes Cook Time: None. Just toss ingredients together
- 3-4 cups mixed greens
- 1/3 cup pepperoni chopped
- 1/3 cup red onion sliced
- 1/3 cup tomatoes chopped (optional)
- 1/4 cup pepperoncini sliced
- 1/4 cup feta cheese
- Salt and pepper to taste
- Easy Garlic Balsamic Dressing to taste. A little goes a long way with this dressing.
- Mix all ingredients together in a bowl. Add dressing to taste. Enjoy!
These ingredients are all ingredients that are super easy for me to just grab out of the fridge and toss the salad together. I work from home and only have a quick lunch so to me a quick and easy lunch is super important to me. I prep the salad dressing in advanced, so it comes in super handy. I sort of don’t even have to think about what I am going to eat for lunch. I just grab it in the fridge, toss the salad and enjoy!
