Smoked Bacon Cauliflower Chowder

This Smoked Bacon Cauliflower Chowder is warm, hearty and yummy. It’s a perfect healthy soup for anyone who is trying to cut down on carbs or for someone who wants a healthy soup that doesn’t lack flavor. My family doesn’t really like the taste of cauliflower. I had to cook the cauliflower with the bacon so the cauliflower would take on the taste of the smoked bacon and it worked! This is such an easy soup. It only took 30 minutes. That is a win already!

Servings: 6-8     Prep Time: 10 minutes     Cook Time: 20 minutes


  • 1 pound smoked bacon chopped
  • 1 medium head of cauliflower chopped
  • 1 pound cream of chicken (family size can)
  • 4 cups water
  • 1 cup heavy whipping cream
  • 1-1/2 cups green onions chopped
  • 2 cups cheddar cheese shredded
  • 1 tsp. Himalayan sea salt
  • 1 tbsp. black pepper


  1. Take raw bacon strips and chop into cubed pieces
  2. Add cubed bacon and cauliflower to high heated pot. Cook until cauliflower is really soft and bacon begins to brown
  3. While bacon and cauliflower are cooking, whisk well in a bowl cream of chicken, water and heavy whipping cream then place to the side
  4. When cauliflower is really soft and bacon begins to turn brown add what was whisked in the bowl to the pot. Then stir in green onions, cheddar cheese, salt and pepper
  5. Turn down heat to low, place cover on top of pot and simmer for 5-10 minutes
